  • 6 slices thick-cut bacon, chopped
  • 5 lb. beef brisket, trimmed
  • salt and pepper
  • 1 large onion, halved and sliced thin (about 2 cups)
  • 2 cloves garlic, minced
  • 2 (12 oz.) bottles of beer (I used a winter white ale.)
  • 2 T. dark brown sugar
  • 1 (16 oz) jar sliced peperoncini peppers
  • 2 lbs. Yukon gold potatoes, peeled and quartered
  • 1/4 c. flour
  • 1/2 c. water
