Ingredients

  • 2 lrg Tomatoes, seeded and minced
  • 3/4 c. Green onion, minced
  • 1/4 c. Fresh cilantro, minced
  • 1 Tbsp. Pickled jalapeno peppers
  • 1 1/2 tsp Salt
  • 1 c. HELLMANN's mayonnaise
  • 3 Tbsp. Lime juice
  • 1 tsp Chili pwdr
  • 1 tsp Grnd cumin
  • 2 lb Small red potatoes, cooked Sliced 1/4" thick
  • 2 c. Cooked chicken, shredded
  • 1 lrg Yellow bell pepper diced
  • 1 lrg Red bell pepper diced Lettuce leaves Tortilla chips Lime wedges

Directions

  1. In medium bowl combine tomatoes, green onions, minced cilantro, jalapeno peppers and 1 tsp. of the salt; set aside. In large bowl combine mayonnaise, lime juice, chili pwdr, cumin and remaining 1/2 tsp. salt. Add in potatoes, chicken, yellow bell pepper and half of the tomato mix; toss to coat well. Cover; chill. To serve, spoon salad onto lettuce lined platter. Spoon remaining tomato mix over salad. If you like, garnish with tortilla chips and lime wedges.
