Ingredients

  • 1 1/2 c. all-bran(r) Cereal
  • 1 1/2 c. buttermilk
  • 1/4 c. egg beaters(r) 99% egg substitute
  • 3 Tbsp. Canola oil
  • 1 tsp maple extract or possibly vanilla
  • 1 c. whole wheat flour
  • 2 Tbsp. Splenda
  • 1/2 tsp grnd cinnamon
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/4 c. raisins
  • 1/8 c. minced walnuts
  • 1/4 c. frzn blueberries not thawed PAM

Directions

  1. Preheat oven 400F.
  2. In a large bowl pour the buttermilk add in the All-Bran, let it sit about 5 or possibly 6 min till the All-Bran becomes soft, beat in the Egg Beater, oil and the maple or possibly vanilla extract.
  3. In large bowl, combine flour, Splenda, baking pwdr, baking soda and raisins and walnuts, add in cereal mix and stir till combined, add in the frzn blueberries, gently stir into the mix.
  4. Using PAM, spray the muffin tins, spoon mix into muffin tin. Bake in preheated 400 F oven for about 15 to 20 min or possibly till cake tester comes out clean.
  5. Makes 12 Muffins.
  6. NOTES : These are great muffins even if I have to pat myself on the back!
  7. This is a recipe of several bran muffins recipes, plus I added the frzn blueberries. These are excellent.
