Heavenly Shrimp Cocktail Recipe

A refreshing Baja style Shrimp Cocktail serve in a glass with cooked shrimp, cucumber, tomatoes, onions, cilantro, avocado in a mixture of cocktail sauce and orange juice. I added my own twist by adding chopped Jicama for extra crunch!

Directions

  1. In pan, add shrimp to water, white wine and bring to a boil. Take out shrimp and let cool. Reserve stock. Peel cooked shrimp and cut into pieces about 1/4 inch.
  2. In large bowl, mix cocktail sauce, orange juice, shrimp stock, chopped cucumber, jicama, cilantro, and tomatoes. Add salt to taste.
  3. Mix in cooked shrimp and chill.
  4. Right before serving, add the chopped avocadoes, spoon into glass, garnish with an orange slice and serve with a spoon.

    No I have never tried to grill Jicama. I confess I don't grill much but you inspired me to do more of it this summer. :)

      AHA! I had a recipe I wanted to try at one point that was very similar to this. Now I have it permanently, ty for posting it. I love the addition of Jicama. Have you tried grilling jicama slices, it really brings out the sweetness?
