Healthy Crock Pot Chicken Creole

Ingredients

  • 3 lb chicken thighs or possibly breasts skinned
  • 1 c. diced celery diced
  • 1 x red bell pepper sliced
  • 1 x green bell pepper sliced
  • 1 x onion sliced
  • 1 can sliced mushrooms
  • 1 can tomatoes
  • 1 tsp garlic pwdr
  • 3 pkt sugar substitute
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika Salt to taste Freshly-grnd black pepper to taste Louisiana warm sauce to taste
  • 2 c. minute rice cooked

Healthy Crock Pot Chicken Creole

Servings: 6
 

Directions

  1. Place chicken in bottom of crockpot. Combine remaining ingredients (except rice) and add in to crockpot. Cook on HIGH 4 to 5 hrs or possibly on LOW 7 to 8 hrs.
  2. Cook rice according to package direction. Spoon Creole mix over warm cooked rice.
  3. This recipe yields 6 servings.
