Healthy Applesauce Cake

Ingredients

  • 1 3/4 c. sifted whole wheat flour
  • 1 1/2 c. unsweetened applesauce
  • 3 tbsp. fructose
  • 1 c. honey
  • 2/3 c. butter
  • 1/3 c. lowfat milk
  • 2 Large eggs, at room temperature
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1 c. raisins
  • 1/2 c. minced walnuts
  • Apple juice

Healthy Applesauce Cake

Directions

  1. Hot honey and cream with butter. Add in fructose to unsweetened applesauce, set aside.
  2. Add in Large eggs to creamed mix and mix well. Add in lowfat milk and applesauce and continue to beat while you measure remaining ingredients except raisins and nuts. Beat dry ingredients with applesauce mix just till mixed well; don't overbeat. Stir in raisins and nuts; pour batter into a well-greased 9x13 inch pan.
  3. Bake at 350 degrees for 40-45 min, cold 10 min, then invert on wire rack. Mist immediately with a generous portion of apple juice sprayed from a plant mister.
