  • 1 pound frzn hash brown potatoes, thawed
  • 1/2 stick butter (room temperature)
  • 1/2 c. onions, minced
  • 1 teaspoon salt
  • 1 can cream of chicken soup
  • 1 1/2 c. shredded cheddar cheese
  • 1/2 teaspoon pepper
  • 1 c. lowfat sour cream

Directions

  1. Mix the above ingredients. Pour into a large baking dish. Top with a mix of 2 c. finely crushed corn flakes and 1/2 c. melted butter. Bake at 400 degrees for 1 hour. Leave covered till about last 10 to 15 min. This can be refrigerated overnight before cooking.
