Ingredients
- 8 lrg Large eggs
- 1/4 c. minced fresh chives
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 2 Tbsp. butter - (1/4 stick)
- 1 1/2 c. minced bell peppers (mix of red, yellow, and green)
- 4 ounce Black Forest ham cut 1/2" dice
- 1 c. grated Swiss cheese

Ham And Bell Pepper Frittata

Directions
- Whisk Large eggs, chives, salt, and pepper in medium bowl to blend. Heat butter in large broiler-proof skillet over medium heat. Add in peppers and ham; saute/fry till peppers are tender, about 5 min.
- Preheat broiler. Pour egg mix over peppers and ham in skillet. Cook over medium heat till bottom and edges are set, stirring occasionally, about 3 min. Using spatula, carefully lift edges to allow uncooked egg to flow underneath.
- Reduce heat to medium-low. Lift edges 2 or possibly 3 more times, allowing uncooked egg to flow underneath, till top is almost set, about 2 min. Sprinkle cheese over frittata.
- Transfer skillet to broiler. Broil till cheese is bubbling and Large eggs are set, about 1 minute. Let frittata stand at least 1 minute and up to 1 hour. Rewarm in microwave oven, if you like, or possibly serve at room temperature.
- This recipe yields 4 servings.
- Comments: Highlight the homey flavors with boiled turnip greens splashed with vinegar and a basket of biscuits. End with brown-sugar-sweetened peaches and sugar cookies.
