hearty soup, not a woosie puréed thing it's a meal. Not fancy just tasty and adaptable to crock pot but it is not as good. Recipe is easily reduced for smaller quantities but freezes great to provide added meals ( I freeze in one quart bags ) equals (2 bowls). Like most soups mellows for leftovers. Really nice with crunchy bread for dipping. Adapt quantity of veg to your taste, ham and ham seasoning provide enough saltiness. I use pressure cooker pot as it is the biggest one I own, and regular cover for sauce pots fit mine.

Ingredients

  • Coconut oil (or oil of choice).
  • 5-7 quarts liquid (veg. Stock or water)
  • 3-4 large onions divided
  • 7-8 carrots divided
  • 1 stalk celery
  • 1 1/2 bags dried great northern or navy beans rinsed and soaked 6 to 8 hrs.
  • 1/2 bag each of green and yellow split peas. Approximately
  • 2 cloves garlic flattened with side of French knife.( Or up to 6)
  • 1. Tbsp oregano
  • 2 bay leaves ground pepper to taste
  • 2 handfuls fresh green beans trimmed and left whole
  • 6 oz white wine.
  • 1 to 2 tbsp cumin
  • Ham bone (with some meat left on.)
  • 3/4 to 1 lb. ham cut in chunks. Or more ( I like ham so I double)
  • 1 package Goya ham flavored concentrate ( or similar)

Directions

  1. Soak beans at least six hrs.
  2. Put ham bone in 6 Qt. Pot with 4quarts stock or water, with 1 each carrot, cut in 3, onion cut in half, an celery cut in thirds add Garlics bring to boil for 30 minutes reduce to simmer, add wine, and seasonings and let simmer for 2 or more hrs.
  3. Drain soaked beans (do not rinse). Boil for 15 minutes, reduce to simmer for additional 1 1/2 hrs,
  4. Add split peas continue simmering
  5. prepare vegetables, cut carrots into 1/2" coins, Quarter onions and add to soup with green beans. Add chunked ham pieces (I like pieces about 1" size they cut with a spoon when cooked and hold together better).
  6. Continue with simmer until split peas and veggies are cooked to your taste, 3/4 hr. Plus or minus, depending on simmer.
  7. Let sit for 1/2 hr.
  8. Enjoy with crunchy bread of choice.
