Ingredients

  • 1 lb Dry navy beans, or possibly soup beans
  • 4 c. Ham broth, bones & leftovers
  • 2 x Onions, sliced
  • 2 c. Tomatoes, canned or possibly fresh
  • 2 Tbsp. Fresh parsley, minced
  • 1/2 c. Celery, minced

Directions

  1. 1) Soak the beans overnight, drain and cook in the ham broth till they are tender.
  2. 2. Add in the other vegetables and cook till they are soft.
  3. 3. Remove the bone, add in the parsley and pcs of leftover ham.
  4. 4. Simmer for a few min, then serve.
  5. NOTES : Soup will be quite thick.

    Great recipe and not so difficult to prepare. In order to make it even tastier I added a few slices of jamon iberico de bellota - aka iberico ham or pata negra- thinly cut. Because iberico has a strong and elicious flavor you do not need much, only 50 grams or 1.8 OZ for four people added once the soup is finished.
