Ingredients

  • 1 lb freshly-baked dinner rolls
  • 3 1/2 c. lowfat milk
  • 4 x Large eggs
  • 2 c. sugar
  • 1 tsp vanilla extract
  • 1/2 c. raisins
  • 1 can crushed pineapple - (8 ounce)
  • 1/4 c. water
  • 1 1/3 c. sugar
  • 11 Tbsp. butter - (abt 1 1/3 sticks) cut small cubes
  • 3/4 tsp grnd cinnamon
  • 1/2 Tbsp. fresh lemon juice
  • 3/4 tsp vanilla extract
  • 2 Tbsp. Jack Daniels

Directions

  1. To make bread pudding: Tear rolls into 1/2-inch square pcs, being careful not to squeeze bread so it remains light and fluffy. Place bread in bowl. Add in lowfat milk and, stirring occasionally, let bread absorb lowfat milk to point of saturation, about 15 min.
  2. In another bowl, beat Large eggs. Add in sugar, vanilla, raisins and pineapple. Mix well. Add in to bread/lowfat milk mix and mix till combined with rubber spatula.
  3. Preheat oven to 375 degrees. Pour into 13- by 9-inch or possibly 14- by 10-inch pan. There should be about 1-inch head space. Loosely cover pan with foil. Bake in preheated oven 40 to 45 min or possibly till golden and puffy.
  4. While pudding is cooking, don't slam oven door. Check for doneness by piercing pudding in several places with a toothpick. Each time toothpick should come out clean. Cold slightly, cut into 6 portions. Top each with hot Jack Daniels sauce.
  5. Jack Daniels Sauce: Place water and sugar in saucepan. Mix till sugar dissolves. Set over medium heat and cook without stirring till mix comes to boil. Immediately reduce to simmer and cook till mix is clear.
  6. Turn off heat. Add in butter, stir till butter is completely melted. Add in cinnamon, lemon juice, vanilla and Jack Daniels; whip lightly to combine. Remove from stove top and cold slightly. Serve immediately or possibly cold completely and reheat when ready to serve.
  7. This recipe yields 6 servings.
