Ingredients

  • 1 lb ground beef, browned
  • 1 onion, chopped
  • 1 large baking potato, diced
  • 3 ribs of celery, chopped
  • 3 cloves garlic, minced
  • 1 tomato, diced
  • 1 jalapeno, chopped
  • 1 12-oz bag frozen corn
  • 1 12-oz bag frozen peas & carrots
  • 1 16 oz can chicken stock
  • 1 8 oz can tomato sauce
  • 1/2 cup chopped fresh cilantro
  • 1 tbsp black pepper
  • 1 cup water

Directions

  1. Chop vegetables
  2. Brown beef and drain fat
  3. Stir all ingredients together in large pot
  4. Cover and simmer for 30 - 45 minutes (until vegetables are tender)
  5. Serve with shredded cheddar cheese and/or sour cream if desired. Pairs well with cornbread.
