Ground Beef Corn Pone Pie

Ingredients

  • 1 pound grnd beef
  • 1/2 c. minced onion
  • 1 tbsp. shortening
  • 3/4 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 1 med. minced bell pepper
  • 1 to 2 c. canned tomatoes
  • 1 to 2 canned kidney beans, liquid removed
  • 1 pkg. Jiffy cornbread mix, mixed

Directions

  1. Preheat oven to 425 degrees. Brown grnd beef with peppers and onion in shortening in skillet, stirring till crumbly. Add in seasonings and tomatoes. Simmer, covered, for 15 min. Add in kidney beans. Pour into greased 1 1/2 qt casserole and top with cornbread batter. Spread proportionately with knife. Bake 20 min. Yields: 6 to 8 servings.
