.%20I%20went%20ahead%20and%20directed%20him%20to%20the%20first%20sentence%20of%20this%20post.%20Yes%20Honey,%20I%20did%20it%20on%20purpose%20and%20no%20Honey,%20it's%20not%20because%20I%20am%20looking%20to%20get%20more%20hits.%20Is%20that%20even%20possible?%3C/p%3E%3Cp%3EThis%20has%20been%20a%20busy%20week%20for%20me!%20I%20went%20back%20to%20boot%20camp%20because%20the%20weight%20that%20I%20ever%20so%20fantastically%20lost%20in%20Italy%20was%20apparently%20waiting%20for%20me%20when%20we%20returned%20home.%20How%20the%20heck%20does%20that%20happen?%3C/p%3E%3Cp%3EI%20was%20also%20tired%20of%20listening%20to%20myself%20complain%20about%20my%20jetlag%20schedule%20which%20puts%20me%20to%20sleep%20around%20%207:30%20pm%20and%20wakes%20me%20up%20about%202:30%20am.%20To%20switch%20it%20up%20I%20decided%20to%20rely%20on%20the%20old%20saying:%20'if%20you%20can't%20beat%20em',%20join%20em''.%205:30%20am%20boot%20camp%20doesn't%20seem%20so%20bad%20when%20you've%20been%20up%20for%20three%20hours.%3C/p%3E%3Cp%3EThis%20delicious%20little%20sandwich%20is%20a%20version%20of%20one%20I%20did%20a%20while%20ago%20that%20was%20a%20huge%20hit%20in%20the%20house.%20The%20salty%20bite%20from%20the%20vegan%20bacon%20gives%20it%20a%20kick%20and%20some%20extra%20protein%20while%20the%20grill%20on%20the%20veg%20lends%20a%20fantastic%20smoky%20flavor%20not%20found%20when%20you%20work%20with%20'plain%20old'%20vegetables.%20(Not%20that%20I%20don't%20lurve%20you,%20plain%20old%20vegetables,%20muah!)%3C/p%3E%3Cp%3ENot%20necessarily%20the%20most%20healthy%20sandwich%20due%20to%20the%20'total%20carbohydration',%20also%20known%20as%20bread%20but%20you%20could%20easily%20make%20it%20carb-less%20should%20you%20so%20choose.%20The%20next%20day%20I%20arranged%20the%20veg%20with%20a%20little%20daiya%20'cheese'%20on%20a%20plate%20and%20enjoyed%20it%20just%20like%20that.%3C/p%3E%3Cp%3EA%20simple%20yet%20delicious%20meal%20and%20easy%20to%20make%20ahead%20of%20time.%20Oh,%20and%20it's%20portable!%3C/p%3E%3Cp%3EYield:%20about%204%20sandwiches%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3E1%20package%20Smart%20Bacon%3C/p%3E%3Cp%3E1%20zucchini,%20sliced%20into%20thin%20strips%20(use%20a%20mandoline!)%3C/p%3E%3Cp%3E1%20eggplant,%20sliced%20into%20thin%20strips%20(use%20a%20mandoline!)%20Note:%20there%20will%20be%20extra.%20See%20upcoming%20post%20for%20uses!%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EPut%20zucchini%20and%20eggplant%20in%20two%20separate%20bowls%20and%20drizzle%20with%20olive%20oil.%20Sprinkle%201%20teaspoon%20of%20thyme%20over%20each,%20toss%20and%20add%20a%20little%20salt%20and%20pepper.%20Toss%20again%20and%20let%20sit%20while%20you%20heat%20your%20grill%20pan%20or%20grill.%3C/p%3E%3Cp%3EHeat%20your%20grill%20or%20grill%20pan%20to%20med/high%20heat.%20I%20use%20the%20Mario%20Batali%20grill%20pan%20because%20it%20rocks.%3C/p%3E%3Cp%3EOnce%20hot,%20ensure%20there%20is%20enough%20olive%20oil%20to%20keep%20veg%20from%20sticking%20(you%20may%20need%20to%20add%20more)%20and%20grill%20off%20your%20zucchini,%20eggplant%20and%20onion%20(note%20your%20onion%20didn't%20get%20marinated).%20Each%20side%20should%20be%20grilled%20for%20about%2030%20to%2060%20seconds.%20When%20each%20batch%20is%20done,%20set%20aside%20and%20move%20on%20until%20all%20your%20veg%20is%20done.%3C/p%3E%3Cp%3EOnce%20veg%20is%20done,%20grill%20off%20your%20bac'n%20in%20the%20same%20pan.%20I%20like%20to%20do%20it%20this%20way%20because%20you%20get%20the%20lovely%20grill%20marks.%20If%20you're%20short%20for%20time,%20you%20can%20also%20cook%20your%20bac'n%20in%20a%20separate%20pan%20while%20you're%20grilling%20your%20veg.%3C/p%3E%3Cp%3ENow%20it's%20simply%20time%20to%20assemble%20your%20sandwiches%20and%20then%20grill%20again%20(hence%20the%20double%20grill).%20That's%20why%20I%20love%20this%20meal...%20so%20easy.%3C/p%3E%3Cp%3EAssembly:%3C/p%3E%3Cp%3ECut%20your%20baguette%20into%20four%20even%20pieces%20then%20slice%20each%20piece%20through%20the%20middle%20and%20spread%20open%20to%20assemble.%3C/p%3E%3Cp%3EOn%20the%20bottom%20half%20of%20each%20piece,%20sprinkle%20a%20little%20daiya%20'cheese'.%20On%20top%20of%20that%20arrange%20the%20grilled%20onions.%3C/p%3E%3Cp%3EOn%20the%20other%20half%20of%20the%20bread%20(the%20top%20half)%20start%20with%20a%20little%20daiya%20'cheese'.%20On%20top%20of%20that%20stack%20the%20bac'n%20then%20finish%20with%20the%20grilled%20eggplant%20and%20zucchini.%3C/p%3E%3Cp%3EFlip%20the%20top%20half%20onto%20the%20bottom%20half%20and%20squish%20the%20whole%20thing%20down.%3C/p%3E%3Cp%3EOn%20the%20same%20grill%20pan,%20arrange%20your%20sandwiches%20and%20grill%20away.%20You%20will%20get%20those%20lovely%20grill%20marks%20on%20top%20which%20makes%20the%20sandwich%20so%20much%20more%20interesting!%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3ECut%20your%20sandwich%20pieces%20in%20half%20at%20an%20angle%20and%20arrange%20on%20a%20plate.%20Finish%20with%20a%20little%20serving%20of%20the%20fantastical%20superfood%20salad%20and%20you're%20ready%20to%20serve.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%
