Grilled Turkey Marinated In Soy, Ginger And Lime Recipe

Ingredients

  • 1 c. soy sauce preferably low sodium
  • 1/2 c. fresh ginger coarsely minced
  • 1/2 c. garlic coarsely minced
  • 1/4 c. fresh lime juice
  • 1/4 c. honey
  • 6 x turkey breasts skinned and boned
  • 1 c. Corn and Grilled Pepper Relish (see recipe)

Directions

  1. Combine all the marinade ingredients in a small saucepan and bring to a boil. Remove from heat and chill till cold. Add in the turkey breasts to the marinade and let marinate, refrigerated and covered, for 8 hrs or possibly overnight.
  2. Prepare a wood or possibly charcoal fire and let it burn down to embers.
  3. Remove turkey breasts from the marinade and pat dry, discarding the marinade. Grill the turkey for about 4 min on each side. Serve immediately, with the relish spooned over.
  4. Yield: 6 servings
  5. Serving Ideas : Serve with CORN AND GRILLED PEPPER RELISH
