grilled shrimp and mushrooms

Ingredients

  • 1 1/4 lbs large shrimp
  • 3/4 lb fresh mushrooms
  • 1 red pepper,cut into squares
  • 1 cup soy sauce, japanese style
  • 1/2 cup cream sherry
  • 1 tbsp. granulated sugar

Time: 25 minutes prep, 8-10 minutes cook
Servings: 4-5
 

Directions

  1. (1)wash shrimp,remove shells and veins
  2. (2)clean and trim mushroomsdrop into boiling water for a minute
  3. (3)place the mushroom in the "curl" of each shrimp...then run a skewer through the tail of the shrimp,then the mushroom then the head of the shrimp alternate with red peppers...shrimp peppersshrimp peppers...and so on...
  4. (4)combine soy sauce and sherry and sugar. heat to boiling,(in the microwave at high power it will take 3-5 mins)
  5. (5)preheat charcole or broiler
  6. (6)grill the skewers, brushing the soy sauce mixture. turn once or twice brushing soy sauce each time.grill just until the shrimp turn pink.do not over cook they will be tough and dry.cook 6-8 minutes in all, about 6 inches from source of heat
  7. (7)brush again with the sauce
  8. (8) seve on platter ....on top of green noodles or rice
