Grilled Salmon With Strawberry Salsa Recipe

Ingredients

  • 1 x English or possibly seedless cucumber finely minced
  • 1 x green onion thinly sliced
  • 1 Tbsp. minced cilantro
  • 3 Tbsp. seasoned rice wine vinegar - (to 4)
  • 2 c. fresh California strawberries hulled, and diced small
  • 1 x yellow pepper finely minced
  • 1 stk unsalted butter
  • 1 x garlic clove
  • 1 Tbsp. honey
  • 2 Tbsp. soy sauce
  • 1 Tbsp. fresh lemon juice
  • 6 x skinless salmon fillets (or possibly fish of your choice)

Directions

  1. Prepare salsa at least one hour ahead. Mix cucumbers, green onion, cilantro and vinegar. Cover and refrigerateat least one hour. Just before serving, add in strawberries.
  2. In a small saucepan heat butter with garlic over low heat. Stir in honey, soy sauce and lemon juice and cook 2 min, set aside.
  3. Prepare a charcoal grill, when ready brush sauce on salmon pcs and place on a well-oiled fish grilling rack. Place rack over coals about 4 inches from fire and grill approximately 4 to 5 min on each side. Brush with the sauce again after turning, and again when done. Transfer to hot platter. Top with salsa.
  4. This recipe yields 6 servings.
