Grilled Portobello Sandwich With Goat Cheese And Green Sauce

Ingredients

  • 4 x Portobello mushrooms
  • 8 ounce Goat cheese sliced
  • 2 Tbsp. Extra virgin olive oil Salt to taste Freshly grnd black pepper to taste
  • 1/4 c. Baby spinach
  • 1/4 c. Basil leaves
  • 1 tsp Tarragon
  • 1 tsp Balsamic vinegar
  • 1 tsp Capers
  • 2 x Roasted garlic cloves
  • 2 Tbsp. Extra virgin extra virgin olive oil

Directions

  1. Puree sauce ingredients in a blender. Rub mushrooms with oil and season with salt and pepper. Grill rib side down first for four min. Turn over and spoon sauce over Portobello, while on grill, and continue to grill for an additional 4 min. Add in slices of goat cheese, touch with a little bit more of the green sauce. Remove from grill and allow to cold slightly.
