Ingredients

  • 1/2 cup light Italian salad dressing, divided
  • 2 portobello mushroom caps, gills removed/3
  • 2/3 cup fresh spinach leaves, cut into strips
  • 1 tomato, cut into 4 slices
  • 2 Kaiser rolls, split

Directions

  1. Pour 1/4 cup of the salad dressing over mushrooms in a shallow dish. Refrigerate 1 hour.
  2. Preheat grill to medium-high heat. Remove mushrooms from marinade; discard marinade. Grill 5 minutes on each side or until tender.
  3. Place spinach and tomatoes divided equally between bottom halves of rolls; drizzle with remaining dressing. Cover with mushrooms and tops of rolls.
