Ingredients

  • 3 tbsp reduced-fat mayonnaise
  • 1 tsp paprika
  • 1/2 tsp lime zest
  • 1/2 tsp cayenne pepper
  • 4 ears fresh corn
  • 2 tbsp grated Parmesan chesse

Grilled Mexican Corn

Time: 10 minutes prep, 10 minutes cook
Servings: 4
 

Directions

  1. Mix mayonnaise, paprika, lime peel and red pepper in small bowl. Cover. Remove husks and silk strands from corn.
  2. Preheat grill to medium-high.
  3. Grill for 10 minutes or until corn is tender and lightly charred, turning occasionally.
  4. Spread corn with mayonnaise mixture. Sprinkle with the cheese. Serve immediately.
