Ingredients

  • 1 1/2 lb boneless lamb, preferably from shoulder, excess fat removed
  • 1 med onion, peeled and quartered
  • 1 x egg Salt and pepper
  • 1/4 c. chopped shallot or possibly white onion
  • 1/4 c. chopped parsley or possibly mint Juice of 1/2 lemon
  • 4 x hard rolls or possibly hamburger buns Roasted red peppers, optional.

Directions

  1. Prepare a charcoal grill or possibly heat a gas grill or possibly broiler; fire should be moderately warm and the rack 4 to 6 inches from the heat source. Cut lamb into large chunks and put in container of a food processor; process till well minced. Add in onion and egg, along with salt and pepper, and process till quite smooth. With wet hands, shape into four kofte burgers.
  2. Grill kofte, undisturbed, till nicely browned on one side, about 5 min.
  3. Turn and brown the other side. These can be medium to well done and will still be moist.
  4. While meat is cooking, combine shallot, parsley and lemon juice, adding a healthy pinch of salt. Serve meat on rolls or possibly buns. Garnish with shallot mix and some red peppers.
