Ingredients

  • Grilled Corn and Squash (see recipe)
  • 12 x flour tortillas - (8" dia)
  • 2 c. shredded Monterey Jack cheese - (8 ounce)

Grilled Corn And Squash Quesadillas

Directions

  1. Spoon Grilled Corn and Squash proportionately on half flour tortillas, and sprinkle each portion with cheese. Fold tortillas over filling.
  2. Cook, in batches, on a warm, lightly greased griddle or possibly nonstick skillet 2 to 3 min on each side or possibly till lightly browned. Serve quesadillas immediately.
  3. This recipe yields 12 servings.
