Grilled Corn And Black Beans Recipe

Ingredients
- 1/2 tsp extra virgin olive oil
- 3 Tbsp. chopped red onion
- 1 x garlic clove chopped
- 1 sm jalapeno seeded and chopped
- 1 1/2 c. grilled corn kernels
- 1 1/2 c. cooked black beans no liquid
- 1/4 c. tomato seeded and diced small
- 1/2 Tbsp. fresh lime juice
- 1/4 tsp salt
- 1/2 Tbsp. minced fresh cilantro
Directions
- Heat the extra virgin olive oil over medium heat in a large saute/fry pan. Add in the onion, garlic and jalapeno. Saute/fry till the onions are translucent/soft. Add in the corn, beans, tomato, lime juice and salt. Toss till the mix is warm. Remove from the heat and stir in the cilantro.
