Grilled Chicken with Curry Spice Paste Recipe

This is another tasty spice paste for my spicy grilled chicken recipe. Just follow the cooking directions for the Spicy Grilled Chicken recipe (linked below) but substitute this spice paste. I liked the Cilantro/Citrus spice paste in the main recipe slightly better, which is why I give that one 5 hearts and this one 4. But both are delicious. This one does not require a blender...so if you don't have one handy this might be easier.

Ingredients

  • For Brine:
  • 1/2 cup sugar
  • 1/2 cup salt
  • 8 chicken thighs or legs (or mixed pieces)
  • Freshly ground pepper
  • For the Spice Paste
  • 1/4 cup red wine vinegar
  • 1/4 cup distilled white vinegar
  • 1/4 cup peanut oil
  • 1 Tbsp ground cumin
  • 1 Tbsp curry powder
  • 1 Tbsp crushed coriander seeds
  • 1 Tbsp paprika
  • 1 Tbsp packed brown sugar
  • 2 garlic cloves, minced

Directions

  1. Mix all the Spice Paste ingredients above together in a bowl. Then follow the directions on the Spice Grilled Chicken recipe linked below (including the brining)

    I loved this tender chicken recipe almost as much as the other John posted. We had both for the same meal..so it was easy to compare. The other recipe (linked to this one) was just slightly better in my estimation (though one of our children felt otherwise).
