Ingredients

  • 3/4 cup oilive oil
  • salt
  • 1 lb thinly sliced beef carpaccio cut into 2-3 inch pieces
  • 1 3/4 cup plain breadcrumbs
  • 1/2 cup finely chopped flat leaf parsley
  • 1/2 grated parmesan cheese
  • pepper

Directions

  1. pour 1/2 cup of olive oil onto a platter and season with salt. marinate meat in oil, set aside at room temp for at least 1 hour and up to 3 hours.
  2. mix breadcrumbs with parsley, parmesan and remaining oilive oil, season with salt and pepper. the breadcrumbs should be well seasoned and moist, but not greasy
  3. heat the oven to 350 (or use the bbq grill instead) remove meat from marinate and shake excess off, dunk into breadcrumbs so that the meat is well coated. roll up each breadcrumbed piece tightly and thread onto a metal skewer. repeat putting about 7 on each skewer. set skewers on a parchment lined baking sheet
  4. bake for about 15 minutes, flipping the skewers over after about 8 min. ready when brown and bubbling and crumbs have crisped up. serve immediately
