Green Onion and Potato Pancakes Recipe

As far as I am concerned, nothing beats the flavor and aroma of fresh green onions (scallions) . I make it a point to always include this spice in most of my cooking, especially with sauteed dishes.

I also love omelets and fried cakes of all types, whether they're made with carbs, meat, fish or vegetables.

This recipe combines these two favorites. I could eat them all day - breakfast, lunch or dinner. Not to mention appetizers with cocktails.

Directions

  1. Peel and grate potatoes. Drain off any excess liquid.
  2. In a medium bowl, beat eggs and add in potatoes and green onions. Add flour, salt and pepper to taste and mix well.
  3. Heat part of the Olive oil in a medium pan over medium high heat. Drop about 1/2 cup of the potato mixture into the pan and flatten to form pancakes. Fry both sides until golden brown.
  4. Remove from heat and place on a plate lined with paper towel to drain excess oil.
  5. Repeat process for the rest of the potato mixture.
  6. Serve warm and garnish with fresh green onions, with a side of ketchup, mayonnaise or sour cream.
