Green Leaf Salad With Bleu Cheese Dressing

Ingredients

  • 6 c. torn green leaf lettuce
  • 1 pt cherry tomatoes halved
  • 1 sm red onion sliced thin rings
  • 1/2 c. white mushrooms well cleaned, and thinly sliced
  • 1/4 c. low-fat yogurt
  • 1/4 c. low-fat cottage cheese
  • 4 Tbsp. low-fat buttermilk
  • 2 Tbsp. bleu cheese Freshly-grnd black pepper to taste Mint sprigs for garnish

Green Leaf Salad With Bleu Cheese Dressing

Servings: 6
 

Directions

  1. Combine the lettuce, tomatoes, onion, and mushrooms in a large bowl. Mound the mix on individual plates.
  2. In a medium bowl, combine the yogurt, cottage cheese, buttermilk, and bleu cheese and mix by hand till smooth. Add in the pepper. Drizzle the dressing over each salad. Garnish with mint and serve.
  3. This recipe yields 6 servings.
  4. Serving size: 1 c. lettuce, 1/2 c. vegetables, 1 Tbsp. dressing.
