Green Chili Egg Cups

Ingredients

  • 3 eggs
  • 12 oz egg whites
  • 1/3 cup cottage cheese (we like using low fat cottage cheese)
  • 1/2 cup shredded pepper jack cheese
  • 1/2 yellow onion, diced
  • 4 oz canned green chilies
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Green Chili Egg Cups

Time: 10 minutes prep, 17 minutes cook
Servings: 6 Servings
 

Directions

  1. Preheat oven to 400 degrees. Spray 12 muffin tins with non-stick baking spray, set aside.
  2. In a food processor or blender, blend together eggs, egg whites and cottage cheese until completely smooth. Stir in cheese, onion, green chilies, salt and pepper.
  3. Evenly divide and pour egg mixture into prepared muffin tins.
  4. Bake for 15-17 minutes or until firm and not runny.
