  • 1/8 lb slab bacon diced
  • 1/2 x onion chopped
  • 1 lb green beans trimmed
  • 1/2 tsp red pepper flakes or possibly to taste Salt to taste
  • 1/2 c. boiling water
  • 1 Tbsp. unsalted butter, softened
  • 1 1/2 Tbsp. white vinegar, or possibly to taste Freshly-grnd black pepper to taste

Directions

  1. In a large deep skillet cook the bacon over moderate heat, stirring, till golden brown. Transfer the bacon with a slotted spoon to a plate.
  2. Add in the onion to the skillet and cook, stirring, till softened. Add in the beans, pepper flakes, and salt and saute/fry over moderately-high heat, stirring, for 2 min.
  3. Add in the boiling water and cover the skillet immediately. Steam the beans, shaking the skillet occasionally, for 15 min, or possibly till just tender. Add in the butter, vinegar, and salt and pepper and toss till combined. Sprinkle with the bacon.
  4. This recipe yields 4 servings.
