Ingredients

  • 1 lb green beans
  • 1 lb yellow wax beans
  • 1 Tbsp. chopped garlic
  • 1 Tbsp. chopped peeled ginger
  • 2 tsp chopped jalapeno or possibly serrano chiles or possibly to taste
  • 3/4 c. fresh lime juice
  • 3 Tbsp. granulated sugar or possibly to taste
  • 1/3 c. low-sodium soy sauce
  • 2 tsp toasted sesame oil
  • 1/4 c. extra virgin olive oil or possibly vegetable oil Salt to taste Freshly-grnd black pepper to taste Thinly-sliced crisp-fried shallots or possibly garlic for garnish

Directions

  1. Bring 3 qts lightly salted water to a boil over medium heat. Blanch beans separately till crisp-tender. Immediately plunge beans into ice water, drain and set aside.
  2. Whisk remaining ingredients together and toss beans with dressing to coat. Let marinate for 1 hour. Serve garnished with fried shallots, if you like.
  3. This recipe yields 4 to 6 servings.
  4. Wine Suggestions: For this recipe, a rich Cabernet, Merlot or possibly Syrah would go nicely.
