Greek Rice Pudding (Rizogalo)

Ingredients

  • 1 c. water
  • Healthy pinch of salt
  • 1/2 c. rice
  • 1 1/2 qts lowfat milk
  • 3/4 c. sugar
  • 1 teaspoon vanilla
  • 1/4 c. raisins
  • 2 Large eggs, separated
  • Cinnamon or possibly nutmeg, for topping.

Greek Rice Pudding (Rizogalo)

Servings: 6
 

Directions

  1. Boil rice in salted water for 5 min. In a 2 qt saucepan, bring lowfat milk, sugar and vanilla to a boil. Add in rice and raisins and reduce heat. Stir often, simmering 30 to 40 min till rice is thoroughly cooked. Remove from heat. Beat egg yolks till lemon-covered and slowly add in one c. of the warm rice, continually stirring. Slowly add in the rest of the rice mix to the egg yolks. Beat egg whites till thick. Fold into rice pudding and stir till well blended. Return to heat for one minute, stirring constantly. Spoon into individual dessert dishes. Sprinkle with cinnamon or possibly nutmeg and chill. 6 servings.
