Greek Pita

Ingredients

  • 4 Pitas
  • 16 ounces Ground Lamb or Ground Chuck
  • 1/4 cup Greek Yogurt
  • 1/2 lemon (juice only)
  • 1/2 cup chopped cooked spinach
  • 1 teaspoon oregano
  • one minced clove garlic
  • one tomato diced
  • 1/2 cup Feta Cheese crumbles
  • Black Pepper, to taste
  • Your choice of Lettuce

Greek Pita

Time: 11 minutes prep, 8 minutes cook
Servings: 4
 

Directions

  1. I like to lightly toast the pitas (optional)
  2. Saute ground Lamb or beef, chopped spinach, garlic, crumble the meat finely as you cook, add seasonings, drain off any excess grease
  3. In a small ramekin add Greek Yogurt and lemon, stir well
  4. To Assemble: Slice open Pitas, add yogurt to top, lettuce on the bottom of toasted pitas, add meat and spinach, add diced tomatoes, feta cheese crumbles
  5. Enjoy!
