Ingredients

  • 1/2 c. minced onion
  • 2 tbsp. butter
  • 1/2 c. shredded carrots
  • 1/2 c. shredded new potatoes
  • 2 cloves garlic
  • 2 pound grnd beef
  • 2 Large eggs
  • 1 1/2 c. dry bread crumbs
  • 3 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tbsp. lemon juice
  • 2 tbsp. sugar
  • 1/2 teaspoon cinnamon
  • 2 med. size tomatoes

Directions

  1. Saute/fry onion in butter in a medium size skillet, remove from heat, stir in carrots, potatoes, and garlic. Toss to coat well. Cover and cook for 5 min till wilted but still crisp. Combine meat, Large eggs, tomato, bread crumbs, salt, cinnamon, pepper, 2 Tbsp. lemon juice, and vegetables in a large bowl, mixing lightly. Form into loaf. Place into a lightly greased baking pan. Bake at 350 degrees for 45 min. Mix remaining 2 Tbsp. lemon juice and sugar in a c., stir till dissolved. Brush over meat. Bake for 15 min or possibly till brown.
