Greek Green Beans In Tomato Sauce

Ingredients

  • 4 ripe tomatoes, peeled, or possibly 16 ounce. can tomatoes
  • 2 onions, finely minced
  • 3 tbsp. minced fresh parsley
  • 1 clove garlic, chopped
  • 1/2 c. water
  • 1 tbsp. minced fresh mint or possibly 1 teaspoon dry mint
  • 2 teaspoon oregano or possibly Italian seasoning
  • Salt and freshly grnd pepper to taste
  • 1 1/2 lbs. green beans, cut up, or possibly 2 (10 ounce.) pkg. frzn green beans, defrosted

Directions

  1. Peel and dice the tomatoes. If using canned tomatoes, break up with a fork. Combine tomatoes (including juice) with remaining ingredients, except green beans. Cover and simmer 10 min, stirring frequently. Meanwhile, wash, tip and cut up fresh beans. (If using frzn, allow to defrost.)
  2. Add in green beans to the pot and simmer uncovered, stirring frequently, till beans are tender and sauce is thick. 8 servings, about 50 calories each.
