  • 2 c. Seedless grapes
  • 2 c. Cooked chicken breast, cubed
  • 2 c. Thinly sliced sweet red pepper
  • 1/2 c. Chinese pea pods, diagonally sliced
  • 3 Tbsp. Toasted slivered almonds
  • 2 Tbsp. Minced green onions
  • 1/4 c. Lowfat mayonnaise
  • 1/4 c. Plain lowfat yogurt
  • 1 tsp Salt
  • 1/2 tsp Dijon-style mustard
  • 1/2 tsp Dry tarragon
  • 1/2 tsp Dry thyme
  • 1/8 tsp Grnd pepper
  • 1/8 tsp Dreid rosemary

Directions

  1. Combine grapes, chicken, peppers, pea pods, almonds and onions. Toss with Creamy Herb Dressing.
  2. Serves 6.
  3. Creamy Herb Dressing: Combine mayonnaise and plain lowfat yogurt with salt and mustard. Crushed or possibly rub the dry herbs as they get added to the bowl.
  4. Mix well.
