Grandma's Cheese Macaroni Casserole

Creamy southern style Macaroni and Cheese with a crunchy cracker topping. Great make ahead dish for events and holidays! Sure to be a crowd pleaser.

Ingredients

  • 1 16 oz. box of macaroni noodles (Elbow, Corkscrew, or Rotini)
  • 2 cups of shredded cheddar cheese
  • 1/2 cup of shredded or diced Colby Cheese
  • 1 (10.5oz) can of cream of chicken soup
  • 3 tbsp Sour Cream
  • 2 tbsp mayonnaise
  • 10 Oz of Milk (Use soup can)
  • 1 sleeve of Rits or Saltine crackers, mashed into crumbs
  • 1 TBSP of Butter, melted.
  • Salt and Pepper

Directions

1. Preheat oven to 350 degrees
2. Boil your choice of noodles until just nearly cooked. Drain.
3. In a large mixing bowl, mix Soup, Sour cream, mayo, and milk. Stir until mixed.
4. Pour drained, cooked noodles into mixing bowl
5. Add Shredded cheese and Stir until well combined.
6. Pour into lightly greased casserole dish. I recommend a 9x13 glass.
7. Top with 1/2 cup colby cheese (in tiny cubes or shredded)
Cracker Topping
8. Melt butter in a medium glass bowl. Microwaving on low in 30 second intervals
9. Mix Cracker Crumbs into butter to make a "crumble" of sorts
10. Spread cracker crumbs mixture across top of the noodle mixture
11. Bake for 40 minutes. Check and turn every so often to ensure an even brown on top.
12. Cool for 5 minutes, Serve and enjoy.
Making ahead of time?
13. After putting noodle mixture in a casserole bowl, tightly wrap with plastic wrap. Save Cracker Topping steps for the day of!
