Godo's Nadsballseggs....IE: Eggs Benedict

Ingredients

  • 4 English Muffins
  • 4 Slices of Canadian Bacon or Pork Roll (it's a Jersey thing)
  • 8 Eggs
  • 1/4 cup of Chicken Broth
  • 3 Egg Yolks
  • 2 TSP of Lemon Juice
  • 1 stick of Butter
  • 1 TSP Paprika

Godo's Nadsballseggs....IE: Eggs Benedict

Time: 5 minutes prep, 15 minutes cook
Servings: 4
 

Directions

  1. Toast each half of the muffins until the just start to brown
  2. Poach each egg until the whites are set and the middle is still liquid
  3. Fry the bacon/pork roll
  4. Assemble the muffin with the bacon and egg on top
  5. Pour the Hollandaise sauce on top
  6. Sprinkle the Paprika on top
  7. Make the Hollandaise Sauce:
  8. Mix the egg, lemon and Chicken broth
  9. turn a pan on VERY low heat and add mix
  10. continually whisk until the edges just start to bubble
  11. Take off heat and add a TSP of butter, whisking constantly.
  12. Move pan back to the heat for 15-20 seconds
  13. Take of heat and add another TSP of butter
  14. Continue until all the butter is used.
  15. Serve immediately

I have this friend who lives in Germany. Somehow, she made boiled meatballs sound appetizing. Really....they're boiled. I'll try them sometime this week. However when I mentioned that I was going to make Eggs Benedict, her reply was "I don't know what that is. In Germany, we say eggs like you say balls" As I sit here in stunned silence, I figured I'd write out Balls Benedict recipe.

    I haven't tried to make eggs benedict but i have cooked lots of eggs almost perfectly. I will try soon tho.
