I mentioned above about pasta being such a good vessel for a fusion dish. I have made plenty of recipes hailing from different areas of the world. I love this YELLOW CURRY PASTA that obviously comes from India. How about this CHICKEN SHAWARMA PASTA which plays on Middle Eastern flavors. It is important in so many dishes that are layered that one adds flavor at each step. To make the dish, begin by sautéing the sausage. This step not only chars the sausage but leaves great flavor on the pan bottom. Next follows the addition of the onions. Sautéing the onions picks up all the flavor from the pan. The peppers are added next to soften. Now the tomato sauce is added and cooked for a couple of minutes to cook out the bitterness of the tomatoes. Add the sausages and then the noodles. Finish by adding in the cheese. Mix well.

Instructions
Begin by heat 1/2 tbsp of the oil in a skillet. Add the sausage and cook until nicely browned. Remove the sausages and slice them. Add them back to the pan and brown again. Set aside 3 of the sausages.
Meanwhile, prepare the pasta according to the box instructions.
Add the remaining oil to the skillet. Put the onions in and cook for 3 - 4 minutes. Next, add the peppers and spices and cook for 2 minutes. Now, add in the pasta sauce and mix well. Simmer for a couple of minutes. Return the 3 of sausages to the pan and simmer for a couple of minutes. Add in the noodles, mix well and cook for 2 minutes. Finish by adding in the cheese. Cook 2 more minutes and mix well.
Serve and enjoy!
