  • 3 cups leftover (at least one day old) mashed potatoes
  • 1 cup shredded cheese of your choice ( I used Cabot Seriously Sharp)
  • 3 tbsp. Gluten Free All Purpose Flour; plus 3/4 cup for dredging
  • 1 egg
  • 4 tbsp. chopped scallion
  • 3-6 tbsp. oil for frying
