Ingredients

  • 1/2 cup gluten-free All-Purpose Baking Mix
  • 1 cup evaporated milk,(undiluted)
  • 2 eggs
  • 1 cup canned pumpkin
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon melted butter

Directions

  1. Heat oven to 350 degrees. Grease 9-inch pie pan
  2. Stir all ingredients until blended.
  3. Pour into pie pan.
  4. Bake 35 minutes or until knife inserted in center comes out clean. Refrigerate pie.
  5. Makes 6 to 8 servings.
