Glazed mini meatloaf

Ingredients

  • ½ cup quinoa
  • 1½ cups water
  • 400 g ground beef
  • 1 egg
  • ¼ cup breadcrumbs, homemade
  • 1 tsp dried basil
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp granulated garlic
  • Glaze:
  • ¼ cup hot ketchup
  • 2 tbs Dijon mustard

Glazed mini meatloaf

Time: 20 minutes prep, 35 minutes cook
Servings: 4 servings
 

Directions

  1. Rinse quinoa thoroughly with hot water and cook in 1 ½ cup of water for about 20 minutes. Mix and combine until uniform ground meat, cooked quinoa, egg, bread crumbs and spices.
  2. Shape the mixture into 4 oval loaves, flatten them a little and place on a baking sheet lined with parchment paper.
  3. Brush the mini meatloaves with glaze and bake in the oven for 35 minutes at 200°C.
  4. Glaze: mix ketchup and mustard until smooth.
  5. Serve with mashed potatoes and seasonal salad.
