- ½ cup quinoa
- 1½ cups water
- 400 g ground beef
- 1 egg
- ¼ cup breadcrumbs, homemade
- 1 tsp dried basil
- ¼ tsp sea salt
- ¼ tsp black pepper
- ¼ tsp granulated garlic
- Glaze:
- ¼ cup hot ketchup
- 2 tbs Dijon mustard

Glazed mini meatloaf
Time: 20 minutes prep, 35 minutes cook
Servings: 4 servings
Directions
- Rinse quinoa thoroughly with hot water and cook in 1 ½ cup of water for about 20 minutes. Mix and combine until uniform ground meat, cooked quinoa, egg, bread crumbs and spices.
- Shape the mixture into 4 oval loaves, flatten them a little and place on a baking sheet lined with parchment paper.
- Brush the mini meatloaves with glaze and bake in the oven for 35 minutes at 200°C.
- Glaze: mix ketchup and mustard until smooth.
- Serve with mashed potatoes and seasonal salad.
