Glazed Chocolate Mini Loaves

Ingredients

  • 2/3 c. firmly packed brown sugar
  • 1/2 c. Land O Lakes Butter softened
  • 1 c. miniature semi-sweet chocolate chips melted
  • 2 x Large eggs
  • 2 1/2 c. all-purpose flour
  • 1 1/2 c. applesauce
  • 1 tsp baking pwdr
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 1/2 c. miniature semi-sweet real chocolate chips
  • 1/2 c. miniature semi-sweet chocolate chips
  • 1 Tbsp. Land O Lakes Butter
  • 5 tsp water
  • 1/2 c. powdered sugar
  • 1/4 tsp vanilla
  • 1 dsh salt

Directions

  1. Heat oven to 350 F. In a large mixer bowl, combine brown sugar and 1/2 c. butter. Beat at medium speed, scraping bowl often, till creamy (1-2 min). Add in 1 c. melted chocolate chips and Large eggs; continue beating till well mixed (1 to 2 min). Add in flour, applesauce, baking pwdr, baking soda and 2 tsp. vanilla. Reduce speed to low; continue beating, scraping bowl often, till creamy (1-2 min). By hand, stir in 1/2 c. miniature chocolate chips. Spoon batter into 5 greased 5 1/2x3 inch mini loaf pans or possibly aluminum foil pans. Bake for 35 to 42 min or possibly till center crack is dry when touched. Cold 10 min. Remove from pan; don't remove if using aluminum foil pans.
  2. ( Bread can be frzn unfrosted. Remove from freezer; bring to room temperature before frosting.)
  3. Meanwhile, in 2 qt saucepan combine 1/2 c. chocolate chips, 1 Tbsp. butter and water. Cook over Low heat, stirring constantly, till melted and smooth. Remove from heat. Stir in confectioner's sugar, 1/4 tsp. vanilla and salt till smooth and creamy. Frost each loaf with glaze. Cold completely.
  4. Yield: 5 mini loaves (50 servings)

  6. NOTES : Variation: Glazed Chocolate Mint Mini Loaves: Omit 1 teaspoon vanilla in bread and 1/4 teaspoon vanilla in glaze. Add in 1/2 teaspoon mint extract to bread and 1/4 teaspoon mint extract to glaze.
  7. Bobbie's Notes: This was wonderful. It made 4 mini cakes using the slightly larger pans I own.
  8. This is one of the treats which I made early this year as I need several goodies for events which coming up. The use of applesauce instead of oil makes it healthier than most rich chocolate desserts. It is soooooo good. It is a have-to for chocoholics but everyone who has tried it wants the recipe.
