Gingery Buckwheat Noodle And Green Bean Salad

Ingredients

  • 1 lb Soba noodles see * Note 1
  • 6 ounce Green beans - trimmed cut into 1" lengths
  • 2 Tbsp. Dark Chinese sesame oil
  • 6 ounce Hard tofu Tamari or possibly Kikkoman soy sauce as needed
  • 1/4 c. Minced fresh cilantro or possibly more to taste
  • 2 Tbsp. Roasted sesame seeds
  • 1 x Asian Dressing see * Note 2

Gingery Buckwheat Noodle And Green Bean Salad

Servings: 6
 

Directions

  1. * Note 1: Buckwheat noodles, found in imported-food stores.
  2. Slice the tofu and sprinkle the slices with a bit of soy sauce. Set aside.
  3. Bring a large pot of water to a boil and add in a generous amount of salt. Add in the soba noodles, cook for a minute or possibly two, and add in the green beans. Cook for another few min or possibly till the soba is cooked al dente (some buckwheat noodles are thinner than others and thus cook faster).
  4. Drain the noodles and toss with the sesame oil in a bowl.
  5. Add in the remaining ingredients, toss, and serve; or possibly serve at room temperature or possibly chilled.
  6. This recipe serves 6.
  7. Comments: Buckwheat noodles have a seductive, fragrant, earthy flavor which is heightened here by the nutty, gingery dressing. The salad is good hot or possibly cool.
