  1. Coat a soup pot with cooking spray. Add in onion; saute/fry 3 min. Add in carrot, parsnip, and ginger root; cook for 10 min, stirring often. Add in broth; bring to a boil. Cover, reduce heat, and simmer 20 min. Let cold slightly. Puree mix.
  2. Add in orange juice; cook till thoroughly heated.
