This is a simple and delicious way to cook using chicken, pork or beef for an Asian stir-fried dish .

Ingredients

  • 2 tbsp olive oil
  • 3 garlic cloves, finely chopped
  • 2 tbsp ginger root, finely sliced in strips
  • 1/2-1 Serrano chilli, sliced
  • 4 chicken thighs or 4 breasts, skinned and cut into bite size
  • 1 tbsp fish sauce or season to taste
  • 1 pinch of salt
  • 2 tsp sugar
  • 1 small bunch of cilantro, roughly chopped
  • ground pepper
  • jasmine rice

Directions

  1. Heat up wok or pan and add olive oil. Add garlic, ginger and chillies, and stir-fry until golden. Add the chicken and toss for 1-2 minutes.
  2. Stir in the fish sauce, salt, and sugar, and stir-fry for another 4-5 minutes or until cooked. Season with pepper and add fresh cilantro. Transfer chicken to dish and garnish with the remaining cilantro.
  3. Serve hot with jasmine rice.

    Very easy to make and tastes great. I used a Thai fish sauce (what I had on hand) which is anchovy-based. Also cooked on high heat; the chicken got nice and browned on the outside, tender in.
