Ginger apple Surprise

An apple tart with meringue topping

Ingredients

  • Crust:
  • 1 pkt ginger cookies, crushed
  • 1 tsp mixed spices
  • 100g butter, melted
  • 2 tblsp brown sugar
  • 1/2 tsp lemon juice
  • Filling:
  • 3 egg yolks
  • 1 tin condensed milk
  • 1-1/4 c unsweetened cooked & mashed apple
  • Topping:
  • 3 egg whites
  • 100 caster sugar
  • 1/4 tsp creme of tartar
  • 1/4 c almond slivers

Directions

  1. Crust
  2. Combine ingredients and tightly pack the pie dish, place in freezer
  3. Filling:
  4. Combine milk and egg yolks in a saucepan, stir over moderate heat but do not allow milk to boil, let cool
  5. Pour into pie crust
  6. Topping:
  7. Beat egg whites until soft peaks form, add creme of tarter and gradually add sugar while beating until stiff peaks form.
  8. Using a decorating nozzle, cover tart with the meringue
  9. Sprinkle with almonds
  10. Bake in pre-heated (medium)oven until lightly straw coloured
