Here is a base Sofrito recipe from our family lineage, this batch will make relatively 8 Cups of Sofrito give or take. This sofrito always stays very fresh and is long tasting and can be used in a myriad range of recipes. I have included it here to compliment my Sancocho recipe, enjoy!

      Hey Debbie, I use it as a base in making a variety of spanish rice dishes, stir fry, as well as a base for the Sancocho stew that I have posted here. With some olive oil in the frying pan you heat that up then add the Sofrito (a generous single tablespoons worth is good) and from there you can build your rice or stir fry dishes. It's a wonderful flavor and seasoning that I learned the uses of from my Mom-In-Law over the last number of years.
