Giant Lemon Sugar Cookies

Ingredients

  • 1 cup butter, softened
  • 1-1/2 cups sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 2 tsp grated lemon peel
  • 2 TBSP lemon juice
  • 3 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cream of tartar
  • 2 TBSP coarse sugar

Giant Lemon Sugar Cookies

Time: 25 minutes prep, 15 minutes cook
Servings: 14
 

Directions

  1. Preheat oven to 350°.
  2. In a large bowl, cream butter and sugars until light and fluffy.
  3. Beat in eggs.
  4. Beat in lemon peel and juice.
  5. In another bowl, whisk flour, baking soda, salt and cream of tartar; gradually beat into creamed mixture.
  6. Shape 1/4 cupfuls of dough into balls.
  7. Place 6 in. apart on greased baking sheets.
  8. Flatten to 3/4-in. thickness with bottom of a measuring cup.
  9. Lightly brush tops with lemon juice, sprinkle with coarse sugar.
  10. Bake 13-15 minutes or until light brown.
  11. Remove from pans to wire racks to cool completely.
  12. Store in airtight containers.
