German-Style Potato Salad with Herbs

Tangy German-Style Potato Salad with Herbs is the perfect savory side dish for cookouts and picnics because it contains no mayonnaise- so you won’t have to be as concerned about food spoilage on a hot day.

Ingredients

  • 6 boiling potatoes, peeled
  • 4 cups chicken broth
  • 3 cups water
  • 2 green onions, trimmed and thinly sliced
  • 1 tbsp. spicy brown mustard
  • ¼ cup cider vinegar
  • ½ cup olive oil
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • ½ cup fresh parsley, finely chopped
  • ½ cup fresh chives, finely chopped

Directions

  1. Cut potatoes into 1/4-inch slices and place in a medium pot.
  2. Add chicken broth and water; bring to a boil over medium-high heat. Reduce the heat to medium, cover and simmer about 15 minutes or until potatoes are tender.
  3. In a large bowl, combine green onions, mustard, vinegar, oil, salt and pepper.
  4. Add potatoes and combine gently. Cover and refrigerate at least 6 hours or overnight. Drain off excess liquid. Fold in parsley and chives. Serve at room temperature.
