Garlicky Roasted Chickpea Poppers

Recipe Summary & Steps

Garlicky Roasted Chickpea Poppers

Garlicky Roasted Chickpea Poppers

Here’s a dandy snack under 100 calories. (Did I just say dandy?) Hmmm. Must be channeling my grandmother.

I’m a snacker. Ask my coworkers. I eat all day, so I’m always looking for something healthy to satisfy the munchies.

Reading through the foodie blogs I found an interesting recipe at Acquired Taste for roasted chickpeas.

Who would have thought these crunchy little morsels would be so good! Garlicky and lightly (very lightly salted), they’d make a great salad topping too.

Next time I’m going to toss them with a little chili powder. Sounds good to me!

Happy cooking!

Serves 4

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon garlic oil
  • salt and pepper

Preheat oven to 450.

Toss chickpeas with oil and salt to your taste.

Roast in oven stirring to keep from burning, for 30 – 40 minutes.

What’s good for me in this dish?

Beans are an excellent source of antioxidants, folic acid, potassium, dietary fiber and complex carbohydrates. Beans are filling and a great source of protein. Folic acid is important for the formation of red blood cells. Potassium is important for our nervous system and promotes a healthy heart rhythm. Fiber is important for digestive health.
